Butter Parmesan Linguine


This is one simple one dish meal to prepare for your family.  I like the simplicity of it and yet so delicious.  All you need is some leftover chicken breast meat, frozen veggie, linguine or any kind of dried pasta, butter and shredded Parmesan cheese.

I like the frozen broccoli and cauliflower mixed as it matched well with the pasta but you can certainly used any kind of veggie you have at home, frozen peas and carrots work well too.





Ingredients:

1 box, 16oz/1 lb Linguine
1 pkg, 16oz frozen broccoli and cauliflower
1 cooked chicken breast, shredded with hands
1/2 cup finely shredded natural Parmesan cheese
1/2 cup/ 1/2 stick of unsalted butter
Dashes of Italian seasonings
Dashes of Kirkland Organic no-salt seasonings
Sea salt and freshly ground black pepper to taste

Methods:

1.  Cooked Linguine per package instruction, about 10 minutes.  Set timer for 10 minutes and at 6 minutes, add in the frozen broccoli and cauliflower to cook together.  At the last one minute, add in the cooked shredded chicken.

2. When timer beep. Turn off the heat.   Drain the pasta with ingredients.  Put it back on the pan and add in the butter and Parmesan cheese.  Can put the pan on the still warm burner and let it melt the cheese and butter.  Keep stirring.  Add in all the seasonings to taste.  Mix well.

3.  You can add some dried chili pepper too if you like some kick to it.  Enjoy!
